If you’ve got some green coffee beans, you’ll want to keep them fresh for as long as possible. Unlike roasted coffee, green beans can last a lot longer – but only if you store them properly. The way you keep them can make a massive difference to how they taste when you finally roast and brew them.

Green coffee beans might seem tough, but they’re surprisingly sensitive to their surroundings. Things like humidity, temperature and even strong smells can affect their quality. Here’s what you need to know to keep them in top shape.

Find the Right Spot

The first thing to think about is where you’re keeping your beans. A cool, dry place is best, ideally somewhere between 10°C and 20°C. Try to keep them away from anything that gives off heat, like ovens, radiators or sunny windowsills. Heat speeds up ageing, which means your beans won’t last as long.

Humidity is another big problem. If the air is too damp, the beans can absorb moisture, and that’s a recipe for mould. A cupboard or pantry with steady conditions is a much safer bet than a garage or basement, where the temperature and moisture levels can change a lot.

Choose the Right Container

Airflow is essential, but too much exposure to oxygen can make green beans dry out and lose their freshness. The best solution is an airtight container that keeps air and moisture out while letting the beans breathe just a little.

Food-safe plastic tubs, glass jars or natural fibre bags are all good options. Avoid thin plastic or paper bags – they won’t offer enough protection.

Keep Them Away from Strong Smells

Green coffee beans are a bit like sponges when it comes to smells. They absorb whatever’s around them, and that can mess with the final flavour when you roast them. Avoid storing them near spices, onions, garlic or cleaning products. If your beans pick up unwanted odours, there’s no way to get rid of them.

How Long Do Green Coffee Beans Last?

Green coffee beans can stay fresh for up to a year, sometimes even longer, if stored properly. But over time, they’ll lose moisture, affecting how well they roast and taste.

Watch out for these signs that your beans might not be at their best anymore:

  • A musty or sour smell
  • White spots or discolouration (this could mean mould)
  • A dry, brittle feel instead of a firm, slightly springy texture

Even if they don’t look bad, older beans might give you a flat or dull flavour when you roast them. If you’re aiming for the best-tasting coffee, fresher is always better.

Should You Store Green Coffee Beans in the Freezer?

Freezing might seem like a good idea, but it’s actually not great for green coffee beans. The cold temperature creates condensation, which can lead to mould or spoilage. Plus, every time you take them in and out of the freezer, they go through temperature changes, which isn’t ideal for freshness. Storing them at room temperature in a cool, dry place is a much better way to keep them in good condition.
