Honduras may not be the first country that comes to mind when thinking about coffee origins, but this small Central American nation has been gaining recognition in the specialty coffee industry for its high-quality beans. One coffee that is worth highlighting is the one from San Andres Lempira, a town in the Lempira region known for its delicious and unique coffee.



Originating from small farms owned by 25 producers who work with Bicafe Honduras, this coffee is a true representation of the hard work and dedication put into producing a top-notch product. These producers grow their coffee in the beautiful region of San Andres Lempira at altitudes ranging from 1600 to 1800 meters above sea level.



One of the unique things about San Andres Lempira is its culture of sun-drying coffee on patios. While most farmers in Honduras use mechanical dryers to dry their parchment, the farmers in San Andres Lempira continue to use the traditional sun-drying method. This careful and slow drying process allows for the full flavor profile of the beans to develop, resulting in a truly delicious cup of coffee.



The farmers in San Andres Lempira cultivate a variety of coffee varietals, including Catuai, IHCAFE 90, Lempira, and Pacas. These varietals are grown on farms that range from 0.5 to 20 hectares in size. The high altitudes, along with the perfect climate and soil conditions, create ideal conditions for producing sweet and dense coffee cherries.



The harvest season in San Andres Lempira runs from November to April. During this time, farmers selectively handpick ripe, red coffee cherries and process them on their farms. This process is mostly done by the family members, but some larger farms may hire additional laborers to assist with the harvest.



After harvesting, the coffee cherries are pulped in hand pulpers and fermented in concrete tanks. The parchment is then washed with clean water and laid out to dry on patios. The farmers take great care in raking the parchment frequently to ensure even drying. Once the parchment is dry, it is delivered to Bicafe's warehouse in San Andres Lempira and then sent to their mill in Santa Rosa de Copan for dry milling and preparation for export.



When it comes to grading, this coffee is classified as SHG EP, meaning it is strictly high grown (grown at an altitude of 1200 meters or higher) and has gone through the European Preparation process. SHG beans are known for their slow maturation, resulting in a denser and more flavorful bean. The EP process involves hand-sorting the beans to remove any defective or damaged ones, ensuring a high-quality cup of coffee.
