I suspect that I have roasted and tasted hundreds of coffees from Brazil, but the one thing that remains a constant is that you should never expect to know what a new Brazil is going to taste like. I had a particular favourite from Brazil, which was a gourmet pulped natural yellow bourbon from Ipanema, I liked the cherry cola flavours of a lighter roast and was hoping for something similar in this one as it is a fermented processed coffee.


I was SO not disappointed, this coffee was absolutely fantastic, depth of body, pleasant aromas and deeply satisfying flavours all the way through. Notes of sweet maple, cherry and vanilla through to a burnt brown sugar creamy finish. An abundance of decadent flavours that left a velvety smooth finish and a lingering aroma in the nose. Bright and fresh with a beautifully clean cup. A new favourite from Brazil I think!
A hearty well done to Danila Barbosa and his team for this one. A 24 hour fermentation prior to processing distinguishes this coffee for sure. Really does bring it to life, can't wait to try the fermented Yellow Catuai....
